Brussel Sprout and Almond Casserole

your opinion of sprouts for ever!!!
We say..."Unbelievable but true.. I just wish eating it would
me sing like you!"
This is what you need for the recipe...
1 1/2 pounds / 650gms of Brussel Sprouts
2 oz /50g of butter
1 large onion
3-4 sticks chopped celery
3 heaped tablespoons of plain flour
3/4 pint / 375ml of milk
3/4 teaspoon of nutmeg
3/4 teaspoon of paprika
4 oz / 100gms of cheese diced
3 tablespoons flaked almonds
4 tablespoons toasted bread crumbs
This is how you do it....
Trim the sprouts and cook in boiling salted water for 5 minutes. Drain
and cut into pieces if large.
Melt the butter in a saucepan and fry the chopped onion gently until it
softens. Stir in the chopped celery and cook for 5 minutes. Stir in the
flour and cook for 3-4 minutes. Remove pan from the heat and stir in the
milk gradually .Cook, still stirring, until thickened.Add nutmeg and
paprika and season to taste. Mix in the sprouts and cheese. Spoon the
mixture into a greased casserole dish and sprinkle with toasted
breadcrumbs and flaked almonds. Dot with butter and bake at 375 F/190C
for 20-30 minutes.
Serve this with...roast potatoes and salad.
Wash it down with... anything you fancy!!
