NUTTY PARSNIP SOUP
One and Only...

what you need...
1 onion - chopped; 1
leek - chopped; 2 carrots; 4 large parsnips - chopped;
1 red chilli - chopped; 2 tablespoons peanut butter (crunchy); 2 oz.
creamed coconut; 1 oz. butter / 1 tablespoon Olive Oil; 1 pint veg stock;
chopped fresh coriander.
This is how
you do it...
Sweat onions, leeks
and chilli in oil and butter. After onions are golden (not brown - it
alters the flavour) chuck in other veg, sweat for another 5 mins. Throw in
stock, peanut butter and coconut. Simmer for 20-25 mins. Until veg is
soft. Add coconut. Leave to cool slightly. Blend with hand blender/liquidiser.
Garnish with coriander.
